How breakfast became brunch

Woke up this glorious morning thanking God for yet another day. On my way to the kitchen thinking I'm hungry! First think gits my mind is eggs, sausage and grits. Now, since it's Saturday I'm thinking I can spruce the meal up a bit. Add a little flare to it. I know I've got spinach and tomatoes. Breakfast now consists of sausage, cheese grits with sauteed spinach & tomatoes, eggs, and a cup of hot joe.


So, the first thing I notice when I walk into that kitchen is it has snowed. Bummer, but even more reason to stay in and cook. Open up the frig...no sausage. Open up the cabinet...no grits. Houston, we have a problem. I don't want to bundle up to go to the store. This is when being creative and a natural cook comes in handy. I open the frig again, what do I have? Left over rotisserie chicken. Head to the cabinet. What do I have? Rice. Now my meal has turned into brunch.


I took the rotisserie chicken and pulled the meat of the bone, chopped it up, grabbed a skillet added olive oil, and sauteed the chicken. Started my rice. The rice was in the pouch. (If you don't have instant rice, you should put it on the stove before you start your chicken.) I then halved my cherry tomatoes. You can use whatever tomatoes you have on hand. Washed my spinach. Added olive oil, a pat of butter, and minced garlic to skillet. Heated on medium high just tell garlic got fragrant. I then added my tomatoes, and sliced onions (which I forgot to mention earlier) and the spinach. Sauteed until spinach wilted and added about a quarter of a cup of chicken broth. Just to make a little sauce. I then fried me an over medium egg so that I could have a little yolk. (That was the plan, but it was almost over done...lol)


To plate you just place your rice on first. Add your chicken on top. Add spinach & tomato mixture. Then, top with your egg. You can take a spoonful of the sauce from spinach & tomato mixture and spread over the meal. Voila! You've got a gourmet breakfast/brunch.


As usual this meal is versatile. You can use kale instead spinach. You could actually have grits or polenta. You could use brown rice. You can have hashbrowns: homestyle or shredded. Have chicken sausage or pork. Omit meat altogether. You could add in extra veggies that you have on hand. Plus, you can have anytime of the day.
