Today I pulled into my driveway after getting off work and sat there trying to figure out what to cook. I'm on the phone with my bestie and we're both going over what we have on hand. Ironically, we both had Rotisserie Chicken from a previous day. Epiphany, Chicken Enchiladas.
I go to my trusty Pinterest account, go to my saved pins, scroll down to "Mexican Dishes" click, and then search for chicken enchiladas. Go over the ingredients to see what I need to get from the store. So, I already know I have over half of the ingredients in my pantry and frig. I just need to pick up a couple things. I also, remembered I have two jars of open alfredo sauce. I don't have to make the white sauce from scratch. This day is getting better and better.
Me and my bestie have been to the store and we're ready for what I now call "SCAT." Screen time Cooking and Talking. We're both making Chicken Enchiladas similar but different. All my ingredients are on the counter and we're talking girl talk and cooking. I start by deboning my chicken. Then I cut the chicken into thin strips and place in a bowl you can also shred if your chicken isn't cold. I then switch over to my sauce. I put the alfredo sauce in a pot adding about a fourth of the jar to the chicken bowl. You can add chicken or vegetable broth to your sauce if you want to thin it out. I diced half an onion. From this point I'm putting half of my ingredients into the chicken bowl and the pot with alfredo sauce. Onions, Taco Seasoning, Green Chilies, Sour Cream, and Cheese. I bring the sauce to a slow boil while I stir the chicken. I also add garlic & onion powder, cumin and some rotisserie chicken seasoning to the chicken and sauce. I place the alfredo sauce on low while I prepare to roll my enchiladas. I take a floured tortilla shell. Scoop a large spoon of chicken onto the shell. Place the chicken about a quarter of the way, away from the edge and roll. Once I rolled half of the enchiladas I added spinach to the rest of the meat mixture. My son claims he is allergic to vegetables. Lol. I forgot to add some sauce to the bottom of the pan but my Bestie didn't. I ended up making about 8 enchiladas. I poured the sauce over and then added more cheese on top. I had previously preheated oven to 375 degrees. Let cook for about 20-30 min. or until you see the sauce bubbling. Both our meals turned out great!
One of the things I love about cooking is it is so versatile. I coulda made my white sauce from scratch but I saved me a couple of steps by using the alfredo sauce and used it up since it was an open jar. Thus, killing two birds with one stone. Also, since I have NAFLD (Non Alcoholic Fatty Liver Disease) I omitted cream cheese, even though I do have vegan cream cheese I could have used. I've linked a recipe below but as usually feel free to change it up anyway you like. Use ground turkey or chopped shrimp. Or, use a variety of mushrooms, vegan cheeses, and make your sauce from scratch if your vegan.
