10-Day Salad Challenge

Today is the 23rd of January and the new month in the New Year is almost over. How is everyone doing with their New Year's Resolutions? I hope everyone is on track. I personally don't make them. I just try to do the things I know I need to start or finish. It's my way of psyching myself to not call it a "New Year's Resolution," so maybe I'll actually complete it or at least not feel as bad if I don't.


Like everyone else needing to exercise is one of the things I need to start. Along with eating healthier. Some of the things I need to finish is toxic relationships. I don't have many and the ones I do have is with men. I recently blocked my ex because he can't move on. We still argue about us not being a couple like it happen yesterday. It was almost 2 1/2 years ago. I tried to keep him in my life because he is a really good person. Someone you need in your life especially when your down. Unfortunately, even though he's this great person, we're not compatible as a couple. Our relationship reminds me of what I heard a relationship advisor say. "Compatibly can be seasonal." When I was sick, I needed him. When I got well, he needed me to be sick. We grew apart. My situation with my other friend is we never grew together. Nothing is us, we, ours, etc. Everything is mine, yours, and his/hers. So, after 2 1/2 years of trying (don't judge me) to fit a round peg in a square hole, I'm letting go.


This is where food comes in. You know I have got to get myself right for the next blessing of a man that God is going to send me, I'm going to Negril for a girlfriends wedding and I'm just tired of being out of shape. I'm starting a 10-Day Salad challenge plus a workout routine. To help with the salad challenge I'm going to utilize mason jars that my grandmother left in the basement. Meal prepping will help keep me on track. By getting all my ingredients, chopping and storing in one day, I'll save myself time. If the salads are already completed there's no reason to not complete my goal. I'm going to start with a Greek Chickpea Chicken Salad. I may or may not use the chicken, but the main components of the salad will still be the same.


If you don't have mason jars laying around, just use whatever containers you have. The set up would be the same or you could omit putting dressing in and put in another storage container. Whatever, you choose to do here is the formula you follow from bottom to top:

  1. Dressing

  2. Chunky Vegetables- carrots, broccoli, cucumbers, bell peppers, radishes, onions

  3. Soft Fruit & Veggies- tomatoes, corn, fruit, mushrooms

  4. Protein- cooked grains, nuts, seeds, beans (well drained), boiled eggs, meat

  5. Salad- romaine, spinach, kale, iceberg, mixed greens

  6. Damp paper towel
